One of our favorite gluten free recipes are these wonderful Coconut Flour Chocolate Cupcakes!
I found the recipe at ElainasPantry, which has wonderful recipes!
These are very easy to make and taste just like a regular chocolate cupcake mix version. The recipe
can be followed off her website. While you’re there, look over her other wonderful ideas!
Ingredients: 1/4 C. Coconut flour, 1/4 C. Cocoa, 1/4 teaspoon salt, and 1/2 teaspoon baking soda.
Whisk together the dry ingredients.
Then add the wet ingredients, stir, and place in cupcake liners.
Wet ingredients: 3 eggs, 1/4 C oil, and 1/2 C Agave Nectar.
Bake at 375 for 20 minutes (My oven is hotter and I only cook 14 minutes).
Frost cupcakes or just eat them plain.
I used buttercream frosting:
2 C Powdered sugar, 1/3 C soft butter, 1/2 teaspoon vanilla, and 2 Tablespoons milk
